2 1/2 cups flour
1/2-1 cup semolina
4 eggs
Kosher salt--dash
tsp Olive oil

Mound the flour on a work surface; make a well in the center.
Crack the eggs into the flour well.
Beat with a fork and gradually mix the eggs into the flour.
Add salt and olive oil and continue to mix.
Knead the dough, dusting with flour, until firm and smooth, about 8 minutes. Shape into a ball.
Place the disks on the lightly floured board; cover with a kitchen towel. Cut a 1 inch thick slice from dough. Work it with hands and flatten it out.
Set a pasta machine to the widest setting; run the dough through. Go down 1 size each time you run the dough through until it is to the thickness you want it to be.
Lay sheet of pasta on table covered with tablecloth.
Let it dry (turning at least once) for about an hour.
Cut sheet into desired length. Run small sheet of pasta through fettuccine attachment on pasta machine.
Let dry for another 20 minutes.

Put pasta in salted boiling water. Cook for about 7-9 minutes.
