1/3 c cocoa
1/4 c boiling water
2 tsp vanilla
1 oz red food coloring
1/4 tsp salt
1 3/4 c sugar divided
1 c cake flour
16 egg whites (2 cups)
2 tsp white vinegar

Directions:
Directions:
Preheat oven to 360º. In a medium bowl, combine cocoa, water, vanilla and food coloring.Whisk together and set aside. In a medium bowl, combine salt, 3/4 c sugar and cake flour mixing well and set aside. In electric mixer beat egg whites until foamy. Add vinegar, continue to beat until soft peaks form. With mixer on low, gradually add remaining cup of sugar. Increase speed to high and beat until stiff peaks form. Remove 1 cup of egg whites and add to chocolate mixture gently combining and set aside. Sift flour mixture over egg whites a little at a time and fol after each addition to incorporate. Add chocolate mixture an gently fold into egg whites. When just combined, turn batter into tube pan. Bake until toothpick come out clean 40-45 minutes. Remove from oven and invert until cool.
