Chicken (I usually just cook legs and breasts.)
Salt - Several tablespoons
Pepper
Flour - 2 or 3 cups depending on how much chicken
Wesson Oil-Large bottle


Directions:
Directions:
Mix cold water with 3 tablespoons salt in very large bowl or pan.
Soak chicken in salt water about an hour.
Heat Wesson oil in a deep skillet or electric skillet.

Mix flour with more salt and pepper in large bowl.

Do not rinse chicken. Dip wet chicken in flour totally covering the chicken with flour trying to keep as much on it as you can.

Put chicken in hot skillet. Fill your skillet with pieces barely touching. Reduce to medium heat. Cover with lid. Allow to cook until it browns and is crispy on one side. Then, turn and brown the other side till it is crispy (covered with lid). If necessary, you can turn again to brown more.

Make sure chicken is crispy brown. Repeat this step with remaining chicken until all is cooked.

Put chicken on platter covered with paper towel.
