8 beets (about 2 1/2 #s)
1/2 C coarsely chopped red onion
1.2 C coarsely chopped celery
2 T raspberry vinegar
1 t Honey
2 1/2 t extra virgin olive oil
1.4 t salt
1/8 t pepper

Directions:
Directions:
Leave root and 1-inch stem on beets. Scrub the beets with a brush. Place beets on a foil-lined baking sheet. Bake at 425 degrees for 45 minutes or until tender. Cool. Trim roots and rub off skins. Coarsely chop beets.

Combine beets, onion, celery. Combine rest of ingredients.

Pour over beets toss and serve at room temperature.
