1 lb fresh mushrooms
1 medium onion
5 cups chicken stock
1 quart of whole milk
1/2 cup of butter
1/2 to 3/4 cup flour
1 cup of whipping cream
1 t salt
1/2 t white pepper
1/4 t tobasco (or more to taste)

Wash the mushrooms carefully, trim the stems and thinly slice.
Dice the onion

Bring the chicken broth to a boil, add mushrooms and onion. Return to boil, then turn down to a slow simmer.

Add salt, pepper, and tobasco. Simmer 30 to 40 minutes

Slowly melt the butter using a pan large enough to hold the flour and milk. As soon as the butter is melted, beat the flour into the butter with a whisk. Gently cook for two minutes. (Don't burn the butter). This mixture is called the roux. Here is the deal - the more flour you use, the thicker the roux - then the soup will be.

In a separate pan - still - bring milk to a gentle boil. Once it has boiled, pour over the roux. Immediately, begin beating the milk and roux with a whisk. This mixture must be smooth and creamy. When it is smooth, add it to the mushroom mixture. Gently stir in the whipping cream. Place on simmer.

The soup is now finished. The longer it simmers, the better it will be.
