Crust
1 1/4 c graham cracker crumbs
1/4 c sugar
5 Tbsp butter melted

3 - 8 oz cream cheese
1/2 c sour cream
1 c brown sugar packed
2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/4 tsp ground allspice

2 c canned pumpkin
3 eggs at room temperature

Directions:
Preheat oven to 350º. Mix and pat crust into springform pan. Bake for 8 minutes, cool to room temperature. Place in refrigerator while preparing batter. Beat batter ingredients on medium speed until smooth. Then add canned pumpkin and beaten eggs beating at low speed. Pour mixture into springform pan. Place on cookie sheet. Bake for 1 hr 15 mins or until center is firm. Cheesecake will firm up once cooled and refrigerated. Turn off oven. Open door slightly. Let cheesecake rest in oven for 30 minutes. Transfer to wire rack and cool at room temperature. Remove sides of pan. Refrigerate.
