Ingredients: 3 c. All Purpose flour 2 c. Sugar 1 tsp. Salt 1 tsp. Baking soda 1 tsp. Ground cinnamon 3 eggs 1¼ c. Canola oil 2 tsp. Vanilla extract 1 can (8 oz.) Crushed pinapple, drained 2 c. (4-5 medium) mashed bananas

Directions:Preheat oven to 350º
1) In large bowl, combine dry ingredients.
2) In another bowl, whisk together eggs, oil, and vanilla; alternate adding pinapple and banana until fully mixed.
3) Slowly add wet mixture into the dry ingredients until just moistened.
4) Pour into two greased 8x4 loaf pans. Sprinkle a little extra cinnamon on top before putting into oven.
5) Bake for 60-65 mins or until toothpick comes out clean. Let cool for 10 minutes before removing from pans to wire rack. |

Notes: I'm not sure where D got this recipe, or how, but the first time I had this was at a family get together. We were celebrating some graduations, and it's one of the few times I have had the pleasure of spending time with Mom's side of the family en masse. This delicious banana bread was sitting at the end of the table and I swear I could have eaten the whole loaf by myself. I asked D if she would give me the recipe sometime and she said that she would. I didn't see her again for almost 2 years, until Lonnie's funeral, but she remembered that I had asked and she heard I was coming in from out of state and brought me the recipe at the barbecue. She was always too sweet (and perhaps too sassy) for this earth! She will be sorely missed.
