1 tablespoon oil
1 lb boneless, skinless chicken breast cut into 1 inch cubes
2 cups chicken broth
1 cup chunky salsa
3 cloves garlic, minced
2 tablespoons cumin
1 (15.5 oz) can small white beans (Great Northern or Navy), drained & rinsed
1 cup frozen corn
1 large onion, chopped
salt to taste

Cook chicken in oil until browned on all sides. Stir frequently to prevent sticking. Mix broth, salsa, garlic, cumin, beans, corn, onion and salt in crockpot. Add chicken and stir well. Cover and cook on high 4-5 hours or low 8-10 hours.
