1 cup toasted almonds
1 cup plus 2 tablespoons flour
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon allspice
⅓ cup sugar
¼ cup butter, softened
2 tablespoons honey
1 egg
½ teaspoon vanilla
¼ teaspoon almond extract

Directions:

Finely grind ⅓ cup of almonds in a food processor.

In a bowl, mix flour, ground almonds, baking soda, baking powder, salt, cinnamon, and allspice.

Cream butter and sugar in a mixer. Add honey, egg, vanilla, and almond extract to creamed mixture. Gradually blend dry ingredients and remaining almonds into creamed mixture.

On a well-floured surface, shape dough into 2 logs. (You can also use plastic wrap to shape logs.) (Feel free to chill dough for up to 24 hours at this step.)

When read to bake, preheat oven to 350°F.

Transfer dough logs to a baking sheet lined with parchment paper, leaving space between bars.

Bake for 20 minutes until firm and lightly browned.

Cool logs on a wire rack for at least 5 minutes.

Cut logs into ¾-inch slices.

Place slices on a backing sheet cut side down, leaving space between the biscotti. Continue baking 10 to 15 minutes, turning once, until crisp. Cool completely on a wire rack.
