1 boneless center cut pork loin (about 2 pounds)
2 celery stalks, sliced
2 carrots, sliced
½ onion, sliced
Butter
Salt
White pepper

Directions:
Directions:
Trim pork loin of fat. Season with salt and white pepper. Layer celery, carrots, and onions on the bottom of a roasting pan. Place loin on top. Roast until done adding water occasionally as needed.

Serve with sauce, boiled potatoes, green peas, or cranberries.

¼ Knorr Suisse (beef bouillon)
1 cup white wine
¾ pounds sliced mushrooms, steamed in wine
Cornstarch
3 tablespoons heavy cream.

Directions:
Directions:
Mix Knorr Suisse, white wine, and mushrooms. Thicken with cornstarch. Add heavy cream.
