5 - 6 Boneless skinless chicken breasts

Divide in two:
4 tbsp. butter or margarine
¼ c. veg. oil

Cut in strips:
2 celery stalks
2 carrots
½ large onion
Ham

Chicken coating:
¼ c. flour
½ tsp. salt
¼ tsp. pepper
Parsley flakes

Swiss cheese

Directions:
Directions:
Place ½ butter and ½ oil amount in pan and sauté vegetables and ham. Remove from pan. Combine flour, salt, pepper and parsley flakes in plastic bag. Add thawed chicken breasts to bag and shake it, like you mean it, to coat the chicken. Place remaining butter and oil in pan and heat. Place coated chicken in prepared pan and cook for 5 minutes per side - lightly brown and inside juices clear. Remove from pan and place on foil lined cookie sheet. Top each breast with sautéed veg. and ham mixture. Place a slice of Swiss cheese over mixture on each breast. Place in oven on broil setting until cheese has melted.
