2 lbs hamburger
1 c. chopped onion
⅔ c. celery
1 green bell pepper, chopped
3 (14.5 oz) cans no-salt-added diced tomatoes
1 can Rotel
1 (15 oz) can tomato sauce
1 c. water
2 (1.25 oz) packages chili seasoning
1 (16 oz) can kidney beans, undrained
1 (16 oz) can pinto beans, undrained
⅛ t. salt
⅛ t. pepper
1 T white vinegar

Directions:
Directions:
Brown hamburger until no longer pink. Drain grease. Stir in onion, celery, and bell pepper into the hamburger; cook until onion is translucent, about 5 minutes. Add diced tomatoes, Rotel, tomato sauce and water. Stir in chili seasonings.
Stir in kidney and pinto beans, sprinkle with salt and pepper, and bring to a boil. Reduce heat to low and simmer 1 hour. Stir in vinegar just before serving.

In any savory dish you can omit ingredients or add more ingredients of your choice. When I make this chili I omit the celery and the green pepper. (Yes, I know I am boring) The chili is still delicious. Be adventurous when cooking. You just might create a new recipe!
