Pumpkin Bars


Ingredients:

4 eggs
2 c. sugar
1 c. oil
1 15 oz. can pumpkin
2 c. flour
2 t. baking powder
2 t. cinnamon
1 t. baking soda
1/2 t. salt
1/2 t. ginger
1/3 t. cloves
1 c. raisins (if desired)

Directions:
Directions:
Mix all ingredients together in a large mixing bowl. Beat for 2 minutes until thoroughly blended. Spread into a lightly greased 15 x 10 pan with edges. Bake at 350º for 25 to 30 minutes or until done. Cool pan on a rack for 2 hours before icing.
 

Cream Cheese Icing


Ingredients:

1 3 oz. package cream cheese, softened
1/3 c. butter, softened
1 t. vanilla
2 c. powdered sugar
1/2 c. chopped nuts (if desired)

Directions:
Directions:
Beat together cream cheese and butter. Add vanilla. Beat. Add powdered sugar slowly. Beat together. Spread over cooled pumpkin bars. Sprinkle with nuts. Cut into desired size bars. Keep covered and refrigerated.
