3 eggs
2 cups sugar
1 cup crushed pineapple, drained
½ teaspoon baking powder
2 teaspoons baking soda
¾ teaspoon nutmeg
1 cup Mazola oil
2 cups shredded zucchini
3 cups flour
2 teaspoons vanilla
1½ teaspoons cinnamon
1 teaspoon salt

Directions:
Directions:
Beat eggs and oil, add sugar and vanilla. Fold in zucchini and pineapple mixture. In a bowl, combine baking powder, baking soda, cinnamon, flour, salt and nutmeg; add to liquid mixture. Divide into two loaf pans and bake at 350ºuntil top bounces back, or toothpick inserted comes clean.
