4 tbsp Butter
3 tbsp Flour
1 cup Light Cream
½ cup Milk
½ cup Beer
1½ tsp Salt
¼ tsp Pepper
2 Egg Yolks
2 cups Cooked Lobster
½ cup blanched Almonds

Directions:
Directions:
Melt 4 tbsp butter in saucepan. Stir in 3 tbsp flour. gradually add 1 cup light cream,
½ cup milk and ½ cup beer stirring steadily to the boiling point. Simmer 5 mins.
Lightly beat together 1½ tsp salt, ¼ tsp pepper and 2 egg yolks. Gradually add
the sauce stirring steadily to prevent curdling. Pour back into saucepan.
Add 2 cups cooked, diced lobster and ½ cup blanched almonds.
Heat but do not boil. Season to taste. Serve on buttered toast.
