1½ sticks butter
1 cup sugar
¼ cup molasses
1 egg, beaten
1¾ cup flour
½ tsp. ground cloves
½ tsp. ground ginger
1 tsp. cinnamon
½ tsp. salt
½ tsp. baking soda

Directions:
Directions:
Preheat oven to 350º. Melt butter, sugar and molasses together in saucepan. Cool slightly and add egg; blend well. In a separate bowl, sift flour with spices, salt and baking soda. Add the flour mixture to the butter mixture. Batter will be wet. Drop teaspoons of batter onto parchment paper lined cookie sheet. Cookies will spread. Bake 8-10 minutes. Remove from oven and cool slightly in pan, then remove from pan and cool on a wire rack.

To assemble the ice cream sandwiches, lay the cooled cookies on the counter top side down. Spoon vanilla or coffee ice cream on a cookie. Top with another cookie and press down lightly. Lay the assembled sandwiches in an airtight container and freeze with top off the container overnight. Then put the top on the container to prevent ice crystals. Serve frozen.

My friend and neighbor, Kate, always brought these to our Fourth of July party. Bryce couldn't wait to see her walking through the yard with her very special container of these goodies! Before she could get them to the freezer, he would confiscate one or two. Jeff loved these too, and Kate would bring him over a batch whenever he had a broken limb or was sick. But Bryce would confiscate those too!
