Ingredients: Sauce 1 1/4 c. blackberries 1/4 c. ketchup 1/4 c. honey 1/4 c. brown sugar, firmly packed 1/4 c. ginger, minced 1 tsp. pepper 1-2 tsp. hot sauce, to taste Salt, to taste
Ribs 2 1/2 pounds country-style pork ribs 1 onion, quartered 1 tsp. ground black pepper 2 Tbs. salt

Directions:Sauce Put all ingredients in a blender and pulse until the berries are fully pureed. Pour into a a small sauce pan. Bring to a simmer then turn down the heat to low. Cook on low heat until the sauce is reduced by ⅓ (about 1⅓ c.); be sure to stir occasionally.
Ribs Place ribs in a large pot with enough water to cover. Season with onion, black pepper and salt. Bring water to a boil, and simmer ribs until tender (30-40 minutes).
Preheat oven to 325ºF. Remove ribs from pot, and place them in a 9 x13-inch baking dish. Pour barbecue sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160º F. You may want to quickly finish the ribs on the grill to get a smokey flavor and those beautiful grill marks. |
