4 large eggs
1/2 pound ground Italian sausage
1/2 yellow onion chopped
1 bunch fresh spinach chopped
4 slices Texas toast toasted

Directions:
Directions:
[1] Whisk together eggs with salt and pepper in a medium bowl.
[2] In a large skillet cook sausage over medium-high heat until lightly browned, stir to crumble. Add onion and cook about 3 minutes more until onion is tender.
[3] Add the spinach, stirring until spinach wilts. Pour in the egg mixture. Stir frequently until eggs are set. Serve on toast.
