1 tbsp. unflavored gelatin
¼ c. cold water
½ c. sugar
4 tbsp. flour
½ tsp. salt
1½ c. milk
¾ tsp. vanilla
¼ tsp. almond extract
½ c. whipping cream
3 egg whites
¼ tsp. cream of tartar
½ c. sugar
1 c. coconut (moist and shredded)
1 (9 inch) baked pie shell

Soften gelatin in cold water, set aside. Mix sugar, flour and salt in saucepan, Slowly stir in milk; cook over low heat, stirring constantly until mixture boils. Boil 1 minute longer. Stir in softened gelatin. Cool. When partially set beat until smooth. Blend in vanilla and almond extract. Whip cream until stiff and gently fold into gelatin mixture. Then make a meringue of egg whites, cream of tartar, and sugar. Fold into mixture. Add coconut. Pile into pie shell. Sprinkle with coconut. Chill until set, about 2 hours.
