Crumb Crust


Ingredients:

1 c. flour
¾ c. oatmeal
1 tsp. cinnamon
½ c. oleo (melted)
1 c. brown sugar

Directions:

Mix flour, oatmeal, cinnamon, oleo and brown sugar till crumbly. Put ½ mixture in greased pan. Cover with rhubarb.
 

Filling

4 c. rhubarb
1 c. sugar
2 tbsp. cornstarch
1 c. water
¼ tsp. vanilla
1 small box strawberry jello (optional)


Directions:
Directions:
Combine sugar, cornstarch and water in saucepan. Boil till thick. Add vanilla. Pour over rhubarb and cover with remaining crumb mixture. Bake at 350º for 1 hour.

Personal Notes:
I add a small package of strawberry jello to the hot thickened sauce. Gives it a pretty red color and added flavor. This recipe came from my Mother-In-Law, Margaret Howard.
