*32-48 shrimp, depending on size and wish, peeled
7 medium onions (bout 4 lb.), peeled and thinly sliced
3/4 t sugar
about 2 t salt
1 3/4 c walnut halves
10 oz. butterfly, fusilli or penne pasta
1 lb feta crumbled
2/3 c loosely packed Italian parsley, chopped
1 1/2 T lemon juice
1 1/2 T around pepper

In a large frying pan over high heat, m cook 3 T. olive oil with sugar and 2 t salt, stirring often, until the onions begin to release their juices and turn golden, 10 to 13 minutes. Reduce heat to medium and cook, stirring occasionally, until onions turn a caramel cold and become quite sweet, 35 to 40 minutes mores. If onions begin to stick to the pan during cooking, reduce heat.

Meanwhile on a baking sheet in a 350 degree oven, toast walnuts stirring midway through, until fragrant and golden, about 10 minutes. Remove from het, cool slightly. Pour walnuts into a ziplock bag and lightly crush with a rolling pin. Set aside.

When onions are nearly done, cook pasta in boiling salted water until tender to the bite. Drain pasta, reserving about 1/2 cup of cooking water.

Either in s separate pan or in with the caramelized onions, sauté the shrimp until pink, 3-5 minutes.

Tos shrimp and caramelized onions with the pasta, walnuts, feta, parsley, reserved water, lemon juice, pepper, and remaining 2T of olive oil. Season to taste with salt. Serve hot.
