9 oz. Italian Chicken Sausage
1 Tbsp. Italian Seasoning
6 oz. Orzo Pasta
2 units Chicken Stock Concentrate
6 oz Crushed Tomatoes
½ cup Mozzarella Cheese
½ cup Panko Breadcrumbs

Trim end of Zucchini then grate using large holes of grater. Half, peel and mince shallot.

Heat drizzle of olive oil in a large pan over medium high heat. add sausage and half of the Italian seasoning breaking up meat into pieces. Cook until no longer pink, 3-5 minutes. Transfer to large paper-towel-lined bowl and set aside.

Add zucchini, shallot and a drizzle of oil to same pan over medium high heat. Cool, tossing until tender and zucchini has shrunk by about a third (about 5 minutes). Season with salt and pepper and transfer to bowl with sausage.

Melt 1 tbsp of butter in same pan and add orzo, toss to coat. let toast, stirring often until golden (2-3 min,) Stir in remaining Italian seasoning, chicken stock, 1½ cups water and tomatoes. bring to a boil and cook until orzo is all dente (about 12 minutes.

Drain any access liquid from sausage and zucchini, the stir into orzo pan. Add another 1 tbsp butter and stir to melt. season with salt and pepper. Remove and transfer to baking dish. Sprinkle mozzarella and panko evenly over pan.

Broil and 500º until panko is golden brown and mozzarella melts, 2-3 minutes.
