2 Tbs granulated garlic (or garlic powder)*
1 tsp ground black pepper
1 tsp salt*
1 tsp sweet paprika
½ c Italian seasoned bread crumbs
1 c all-purpose flour
½ c milk
1 egg
3 large boneless, skinless chicken tenders - cut in half and pounded thin (½ inch or so)
1 c canola oil for frying

*2 TABLESPOONS Granulated Garlic?? YES! It is not a misprint - that is how the rich garlic flavor shines in this recipe. DO NOT USE Garlic Salt!

**for the sodium conscious, ommit the salt and substitue 1 tsp onion powder with outstanding results!

1. In a shallow dish, mix together the granulated garlic, pepper, salt (or onion powder), sweet paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.

2. Heat the oil in an electric skillet set to 350º F (175º C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated. Repeat dip and dredge. Shake off excess.

3. Fry chicken in the hot oil in batches for about 3-5 minutes per side, or until the chicken is cooked through and juices run clear. Coating should be crisp and a rich brown color - do not overcook. Remove from the oil with a slotted spatula, and transfer to a parchment lined cookie sheet in a warm oven to hold until finished frying all tenders. Serve immediately for best texture.

This chicken fried chicken recipe is also great for steak tid-bits (a northern thing) or chicken fried steak. For a complete country comfort food meal, serve with mashed potatoes or steak fries and smother everything in creamy country gravy!
