Caesar Salad Dressing

Romaine lettuce

cup vegetable oil
cup extra virgin olive oil
cup white vinegar
1 egg
1 Tbsp lemon juice
2 Tbsp mayonnaise
4 squirts Worcestershire sauce
tsp salt
tsp pepper
Tbsp sugar
1 garlic clove pressed

Blend all ingredients (except lettuce) in blender. Taste and add more pressed garlic or mayonnaise to taste.

Garlic Croutons

3/4 lb loaf of stale bread (5 cups of bread cubes including crust)
4 Tbsp unsalted butter
4 Tbsp extra virgin olive oil
4 medium garlic cloves pressed
2 Tbsp finely chopped fresh parsley or 2 tsp dried parsley
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 cup grated parmesan cheese

1. Preheat oven to 375.
2. In a small saucepan, combine butter, olive oil, pressed garlic cloves, parsley, salt and pepper.
3. Heat over medium heat until butter is melted. Stir to combine, then set aside and let the flavors infuse into the oil while you chop.
4. Cut your bread into 3/4 inch cubes. Transfer to large mixing bowl.
5. Drizzle the seasoned olive oil over your chopped bread and toss until bread crumbs have an even coating of oil.
6. Spread the bread in a single layer on a baking sheet and bake at 350 for 15 to 20 minutes until they are golden brown and crunchy.
7. Add dressing to chopped romaine lettuce and sprinkle with croutons and grated parmesan to taste.
