1 lb. French Puy lentils
1 bunch green onions, chopped
6 cloves garlic, chopped
2 potatoes, cubed
1 1/2 tsp. turmeric
1/2 tsp. ground bayleaf
1/2 tsp. cumin
2 tsp. salt
3/4 c lemon juice
1/2 lb. chopped kale
2 Tbsp. coconut oil
1/2 c fresh parley

Directions:
Directions:
Cook Lentils, onion, garlic, potatoes, and seasonings in a large pot until lentils get soft. Add remaining ingredients, and cook another 10 minutes. Remove about two cups of soup, blend, and add back to the soup for a thicker broth.

A diner once asked for a lemon for his bowl of lentil soup. He explained he was Greek and could not eat lentils without lemon. I do not know if this is true about Greek lentil soup, but decided to try it. The results were very successful.
