1 package frozen artichoke hearts
1 pound fresh mushrooms
¾ cup water
½ cup cider vinegar
½ cup salad oil
½ clove garlic, minced
¾ tsp. salt
¼ tsp. pepper
½ tsp. thyme
¼ tsp. oregano
1 bay leaf
Cherry tomatoes

Directions:
Directions:
Cook artichokes until just tender. Slice mushrooms. Combine the rest of the ingredients, except cherry tomatoes in a large bowl to make the marinade. Add artichokes and mushrooms to the marinade. Marinate in refrigerator 1 day, or as long as 1 week. Add cherry tomatoes before serving.
