4 egg whites, at room temperature
⅔ cup sugar
1 cup semisweet chocolate mini-morsels
1 tsp. peppermint extract

Directions:
Directions:
Beat the egg whites that are at room temperature in a large bowl at high speed 1 minute. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves, (2-4 minutes). Gently fold in mint chocolate chips and peppermint extract.

Drop by heaping teaspoonfuls onto baking sheets lined with parchment paper. Bake at 250º for 35 minutes. Cool slightly on the sheets, then gently remove the cookies and cool completely on wire racks. Store in airtight containers.
