1 cup graham wafer crumbs
1/4 cup white sugar
1/3 cup melted butter
1/2 tsp. cinnamon

2 cups milk
2 tbsp cornstarch
1 tsp vanilla
2 egg yolks
1/4 cup white sugar

2-3 egg whites
3 tbsp. icing sugar

Directions:

Preheat oven to 300 degrees F

Mix graham wafer crumbs, sugar, butter and cinnamon together and place in 9 inch pie plate. (Reserve 1/4 cup to sprinkle on top)

Mix together milk, cornstarch, vanilla, egg yolks, and white sugar in sauce pan and cook on medium until thickened. Stir often to avoid burning.


Pour into pie plate.


Beat egg whites until stiff and then add icing sugar and beat just until mixed. Spread stiff egg whites over top of filling. Sprinkle with crumb mixture.

Bake at 300 degrees for 20 minutes.

Cool and enjoy!
