1 lb. dried chickpeas / garbanzo beans (do not use canned)
½ cup dried fava beans
1 tsp. of baking soda
½ bunch of chopped parsley
½ bunch of chopped cilantro
5 cloves of garlic
2 tbsp. extra virgin olive oil
1 chopped onion
3 stems of chopped green onions
1 tsp. of coriander powder
1 tsp. of cumin powder
½ tsp. cayenne or paprika powder
½ tsp. salt
½ tsp. of fresh ground pepper
2 tbsp. lemon juice
1 tsp. of sesame seeds
2 cups of oil

1. Soak chickpeas and fava beans with baking soda in a large bowl filled with water for 24 hours. Key an eye on it to ensure that the chickpeas and fava beans have not soaked all the water. Add more water if required.
2.Drain the chickpeas and fava beans in a colander and run water to remove any excess soda.
3. In a food processor, add chickpeas, chopped onions, garlic, parsley, sesame seeds, olive oil, cayenne pepper, black pepper, cumin and coriander powders, lemon juice and salt and pulse in batches. Do not over blend the ingredients as they should be slightly coarse.
4. Transfer the batches into a large bowl. Mix with a wooden spoon stirring well to blend all the ingredients and add some air.
5. Heat oil in a wok or a large saucepan. The oil should be hot.
6. Using a falafel maker or an ice cream scoop, add to the hot oil and fry the falafel until they are golden brown. Do not over crowd the falafel in the oil.
7. Flip the falafel over to ensure that they are fried on both sides. Remove the cooked falafel on to a tray lined with paper towel to soak excess oil.
8.Serve the falafel with hummus, tzatziki sauce, mint yogurt chutney, or make a sandwich with pita bread.
