Ingredients: Whole Chicken halved white potatos Optional sweet potatos Carrots Onions Celery White Wine Seasoning ( salt and pepper or lemon pepper or your choice)

Directions:Cut a whole chicken in half and place in a baking dish such as Pyrex Place cut potatos, carrots, celery and onion around the two halves of chicken Season to taste on chicken and veggies with either salt and pepper, fajita seasoning, lemon pepper or your favorite seasoning. Pour a half cup of white wine in and around the chicken and veggies. Try not to wash the seasoning off while pouring in the wine. Cover and bake at 300º for approx 1 hour. Check occasionally so as not to dry out the chicken. |

Notes: You can bake at a lower temp (225 or 250) For a slow cook to help the chicken stay moist. You can sub sweet potatos and it is just as good. Any white wine is acceptable, I usually use a Sauvignon Blanc white wine. This is a very easy and quick dinner. Prep time is probably less than 15 minutes. Half the chicken, quarter the potatos & onions, cut the celery and carrots in approx 3 inch long pieces. You cannot believe how the white wine brings out the flavor of the chicken and keeps it moist. Gives the veggies a wonderful flavor. You can substitute a beef roast for the chicken and red wine for the white wine to make another great dish.
