Personal Notes:
You can bake at a lower temp (225 or 250) For a slow cook to help the chicken stay moist. You can sub sweet potatos and it is just as good. Any white wine is acceptable, I usually use a Sauvignon Blanc white wine. This is a very easy and quick dinner. Prep time is probably less than 15 minutes. Half the chicken, quarter the potatos & onions, cut the celery and carrots in approx 3 inch long pieces.
You cannot believe how the white wine brings out the flavor of the chicken and keeps it moist. Gives the veggies a wonderful flavor. You can substitute a beef roast for the chicken and red wine for the white wine to make another great dish.
