FILLING:
¾ C sugar
1½ teas pumpkin pie spice
(can substitute with: 1 teas cinnamon, ½ teas ginger & ¼ teas cloves)
½ teas salt
1 (15oz can) pumpkin
1 (12oz can) evaporated milk (or half & half)
2 eggs, beaten


1 deep dish pie crust shell

Directions:

1. Heat oven to 425ºF. In large bowl, stir together filling ingredients.
Pour into pie shell.

2. Bake 15 minutes. Reduce oven temp to 350ºF, continue baking 55-60 minutes (or 40-50 min if below 3500 altitude). Done when inserted knife near center comes out clean.

Cool 2 hrs. Refrigerate until serving time. Serve with Cool Whip. Cover & refrigerate leftovers.
