1 cup moong beans
4 cups of water
½ tsp. salt
1 tbsp. lemon juice

3 tbsp. olive oil
1 chopped onion
½ tsp. salt
1 tsp. garlic paste
1 tsp. ginger paste
¼ tsp. paprika or red chili powder
½ tsp. green chili paste
½ tsp. turmeric
½ tsp. cumin and coriander powder
2 finely chopped tomatoes
2 tsp. tomato paste
1 tbsp. lemon juice
2 tbsp. of water
½ cup chopped cilantro leaves

Directions:
Directions:
1. Soak the moong beans for about 24 hours.
2. Drain the water and rinse in a colander.
3. Add water and salt and lemon juice in a saucepan. Bring it to a boil and add the moong beans and boil them for approximately 30 minutes or until the moong beans are cooked. Do not over cook the moong beans. If you are using a pressure cooker, cook for about 10 minutes.
4. Drain the water through a colander.
5. Heat olive in a saucepan, add onions, ginger and garlic. Cook the onions until they are translucent.
6. Add tomatoes and cook them until they are soft and mushy.
7. Add turmeric, coriander and cumin powders.
8. Next add the tomato paste and half of the chopped coriander and cook for 1 minute.
9. Add the boiled moong beans and water and let it simmer for 10 minutes.
10.Garnish and serve with the rest of the cilantro leaves.

11. Enjoy with chapatis or rotla.
