3½ C chicken stock
½ C beef stock
1 C chopped carrot
1½ C celery with leaves, chopped
1 onion, chopped
12 garlic cloves, sliced
¾ C whipping cream
½ teas salt
2 TBLS prepared horseradish squeezed dry or 2 TBLS horseradish root grated fine
1 TBLS white wine vinegar

GARNISH:
1½ TBLS parsley chopped (small flavored croutons can be added too)
¾ C small diced pieces of cooked beef

Directions:
Directions:
Put the stock, celery root, onion & garlic in a saucepan, bring to boil, reduce heat, cover & simmer for about an hour.

Remove from heat then puree the solids in a food processor or blender, then mix in the stock until smooth. Return to the saucepan with the cream & salt, then heat through. When you're ready to serve it, stir in the horseradish, vinegar & pepper & beef garnish. Ladle it into bowls & garnish with parsley.

If serving it as a meal, serve with crusty french/german bread, strong cheese & salad greens
