1 lb fettucine
½ C chopped fresh cilantro (save 2 TBLS for garnish)
2 TBLS minced fresh garlic
2 TBLS minced jalapeno pepper (can remove seeds)
3 TBLS unsalted butter
½ C chicken stock
2 TBLS gold tequila
2 TBLS fresh lime juice
3 TBLS soy sauce
1¼ lb diced chicken breast
¼ diced red onion
½ each, sliced red, yellow & green bell peppers
1½ C heavy cream (i use for every cup heavy cream=¾ C 1% milk & ¼ C evaporated skim milk)

Directions:

1. Cook pasta to coincide with finishing of the sauce/topping
2. Cook ½ C cilantro, garlic & jalapeño in 2 TBLS butter for 4-5 min. Add stork, tequila & lime juice.
Bring to boil & cook until paste like consistency; set aside
3. Pour soy sauce over diced chicken; set aside for 5 minutes. Meanwhile cook onion & peppers with remaining butter. Add chicken & soy sauce to peppers/onions and add tequila/lime paste.
4. Bring to boil. When sauce is done, add to cooked & drained fettuccine & garnish with remaining cilantro .
