TO REMOVE PEACH SKIN:
cover peaches with boiling water, 5 min max, drain, cover with cold water, peel off with knife

FOR 9" pie plate:
2 TBLS melted butter
⅔-1 C sugar
2 tsp almond extract
3-4 TBLS tapioca
4 C peaches (about 7-9 medium)

Directions:
Directions:
Heat oven to 425ºF. Prepare pastry.
Mix sugar, tapioca & almond extract ; stir into peaches.
Pour on top of pie crust in pie pan
Pour melted butter over peaches (keeping 1" away from edge)
Cover with top pie crust.
Seal & slit top crust.

Bake until crust is brown & juice begins to bubble through slits in crust, 35-45 minutes
