1 tbsp. butter
1 medium onion, chopped
1-1/2 lbs. carrots, washed & sliced (about 4 cups)
1 tbsp. grated ginger root
2-1/2 c. vegetable or chicken broth
2-1/2 c. water
1/2 tsp. dried thyme leaves
1 bay leaf, optional
1/8 tsp. pepper
1 c. milk

Directions:
Directions:
In 3-quart saucepan, over medium heat, cook onion in butter until tender. Add carrots, ginger root, broth, water, thyme & bay leaf, if using. Bring to boil. Cover & simmer over low heat - 20-25 minutes or until carrots are tender. Remove bay leaf, if using. Pour in batches into blender or food processor: blend until smooth. Return to saucepan. Or use a stick blender to puree. Add milk & pepper. Cook over low heat 5 minutes, stirring occasionally.
