Christmas Eve Lasagna Recipe

4 cups or more of your favorite red tomato sauce, cooked. (see Mom's Spaghetti recipe elsewhere in this book, or use jarred sauce from the supermarket, or Alfredo Aiello's Meat Sauce).
9-12 strips of Lasagna noodles
1 15 oz container part-skim ricotta cheese
1 egg
¼ cup parsley, preferably fresh
2 cups shredded mozzarella cheese
1¼ cups grated Parmesan cheese

Cook and drain the lasagna noodles. Set aside. In a medium bowl, combine ricotta cheese, egg, parsley and Parmesan cheese.

Heat cooked and prepared tomato sauce over medium heat in medium saucepan.

Spread thin layer of tomato sauce on bottom of greased 13X9X2" baking dish or lasagna pan. Layer 3 noodles side by side on top of sauce. Spread 1/2 the ricotta cheese on top of the noodles. Spread 1 cup tomato sauce over cheese layer. Then repeat with noodles, the other half of the ricotta, sauce. Then add the last layer of noodles, then the rest of the sauce, then spread the 8 oz. of mozzarella cheese as the last layer over the sauce.

Cover and bake in a preheated 350º oven for 45 minutes. Uncover and bake another 15 minutes or until the cheese is brown and the sauce is bubbly. Let stand 10 minutes before cutting and serving.

Can add spinach to the layers for more color and nutrition.
