¾ c. Apple Cider Vinegar
1 c. White Sugar
½ tsp. Black Pepper
1 can Black Beans
1 can Pinto Beans
1 can Whole Kernal Corn
½ c. Green Pepper, chopped
½ c. Red Pepper, chopped
1 c. Celery, chopped
1 sm. Red Onion, chopped
1 can Jalapano Peppers, chopped

Directions:
Directions:
1. Bring the apple cider vinegar, sugar, and pepper to a boil and set aside.
2. Cool to room temperature before adding to vegetables. Drain pinto beans, but do not rinse. Drain all other vegetables.
3. Pour cooled vinegar solution over vegetables. It should sit for 2 days to reach full flavor. It will keep in the refrigerator for 2 weeks. Serve with chips. It can also be used on tacos.

To reduce sodium, I drain and rinse the beans. I usually add more vegetables than what the recipe states.
