10 cups of low-sodium chicken soup
2 lbs dried green split pea, rinsed and drained
1 medium yellow onion, dices small
1/2 red pepper, diced small
4 cloves garlic, minced
1 tbs. minced fresh thyme or 1 teas. Dried thyme crumbled
2 dried bay leaves
2 small ham hocks (1/1/4 lbs.) with several slits into skin
Coarse salt and ground pepper

Directions:

In medium pot, bring broth to a broil, then carefully pour into slow cooker. Add all other ingredients and then season with salt and pepper.
Cover and cook on high until split peas are creamy, approx. 6 hrs. stirring occasionally.
Remove ham hocks, discard skin and bones, dice meat, Discard bay leaves.
Lightly mash peas with the back of a wooden spoon, Return ham and season with salt and pepper.
Serve with tasty rolls or bread, or your favorite salad.
