1 cup butter
½ cup powdered sugar
2 cups flour
¼ tsp salt


FILLING:
1 egg, slightly beaten
⅔ cup sugar, plus
1½ T soft butter
4 tsp cornstarch
3 T lemon juice
grated peel of one lemon
Directions:
Directions:
Cream butter till like mayonnaise. Add sugar and continue creaming. Add remaining ingredients. Blend well. Form into a roll of desired size. Chill. Slice and place on ungreased cookie sheet.
Bake at 400º for 8-10 minutes, until edges are slightly browned.
FOR THE FILLING: Cook ingredients in double boiler till thickened. Chill until firm. Spread between two cookies. May add touch of food coloring to filling.
