Glazed Berry Pie Recipe

Ingredients: 2-3 boxes strawberries 1/4 c. water 1T. lemon juice Few grains salt 2/3 c. sugar 2T. cornstarch The variable number of boxes of strawberries is because the original recipe called for 2 but I prefer more glaze so I use 2 boxes for the glaze and 1 box of whole berries for the pie itself. This latter amount can also vary if you cram a few more into your pie shell.

Directions:Crush 1 box berries slightly. Add water and cook a few minutes to extract juice. Strain juice through a fine sieve or cloth. There should be 1 cup juice. Add lemon juice and salt and bring to the boiling point. Mix cornstarch and sugar thoroughly. Add to hot juice and cook, stirring constantly, until clear. Cool slightly. Pour over whole strawberries that have been arranged in tart shells or pie crust. Top with whipped cream before serving. |
