2 ¾ C flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 C sugar
3 teaspoon cinnamon
1 ½ teaspoon ginger
2 teaspoon cardamom
1 teaspoon ground allspice
¼ teaspoon black pepper
¼ teaspoon white pepper
1 C butter, softened
1 egg
½ teaspoon vanilla extract

Directions:

Line baking sheets with parchment paper. In a large bowl, sift together flour, baking soda, baking powder and salt.
In a different bowl- combine sugar, cinnamon, ginger, cardamom, allspice and peppers. Remove 1/2 cup of the sugar/spice mix and set aside.
Beat the butter and sugar/spice mixture until light and fluffy. Beat in egg and vanilla. Slowly incorporate dry ingredients. Roll dough into 2-inch balls, and then roll each of them into the reserved sugar/spice mixture. Place dough balls on baking sheet about 1½ inches apart.
Flatten each ball with the bottom of a glass or something smooth.
Bake at 350 for 8 to 9 minutes.
These are great for dunking in coffee or chai tea
