1 C white sugar
¼ teaspoon salt
½ teaspoon cream of tartar
2 egg whites
3 tablespoon water
1 teaspoon vanilla

Directions:
Directions:
Combine all ingredients except vanilla in a heavy stainless steel 4 or 5-quart sauce pan. Warm pan over medium low heat and beat with electric hand mixer constantly for 5-7 minutes, or until icing is fluffy and stiff peaks form when beaters are removed. Remove from heat and stir in vanilla.
This receipt should be doubled to cover a layer cake.
Gramma O’Connor would make angel food cakes for birthdays, and frost with the 7 minute frosting. She would cover the top hole of the angel food cake with a graham cracker (not always available – so sometimes it would be a saltine cracker). The birthday kid would get the frosted cracker.
