Need 1 Large 12” skillet with 2” sides and a cover

1 lb. Jimmy Dean sausage browned
or 6-8 slices cooked bacon/or both
20 oz bag frozen hash browns, thawed
8 eggs – mixed together, set aside
1 C shredded cheddar cheese
1 small onion, chopped
2 tablespoon olive oil
2 tablespoon butter

Directions:
In the skillet, heat olive oil and butter over medium heat. Add hash browns. Brown first side, flip, and cook 2 more minutes. Add eggs and work eggs into the hash browns with the tip of a spatula. Cover and cook 4-5 minutes on medium heat. Add cooked meat into the eggs and hash browns. Do not flip. Now add the onions and cook 5 more minutes covered. Do not flip. Add cheese to top and cover for 5 minutes.
(optional – add fresh diced tomatoes)
Cook until juice is bubbling around edges of skillet and are browned. Slide onto pizza pan and rest for 5 minutes.
