4 Tbsp light butter
1/2 Tbsp canola oil
1/2 onion, diced
2 pounds mushrooms
2 Tbsp chicken broth
1 tsp ground thyme
2 Tbsp chopped fresh parsley
4 cloves garlic, minced
salt & pepper, to taste

Directions:
Directions:
Heat butter and oil in a large pan or skillet over medium-high heat.
Sauté the onion until softened (about 3 minutes).
Add the mushrooms and cook for about 4-5 minutes until golden and crispy on the edges.
Pour in the broth and cook for 2 minutes to reduce slightly.
Stir in thyme, 1 Tbsp parsley and garlic. Cook for a further 30 seconds, until fragrent.
Season generously with salt & pepper (to your taste).
Sprinkle with remaining parsley and serve warm.
