1 1/2 pounds of turkey wings...
2 quarts of unsalted chicken stock...
1 large yellow onion, chopped...
1 large carrot, chopped...
2 celery stalks, chopped...
1 garlic head, halved crosswise, that's a whole garlic halved...
6 T of a quick-mixing flour, such as Wonder flour...
1/2 cup of water..
1/2 t of Kosher salt...

Preheat oven to 425º...
Place wings on a wire rack set on a sheet pan, bake until well browned and crisp, about 60 minutes...
Transfer wings to a large Dutch oven, add chicken stock, onion, carrot, celery and garlic....
Bring to a boil over high heat, reduce heat to low and simmer until reduced by half, about 1 hour to 1 hour and a half...
Pour liquid through a fine wire mesh strainer into a bowl, discard all solids...
Return liquid to a deep pan and bring to a boil...
Whisk the Wonder flour and 1/2 cup of water in a bowl, be sure you have no lumps, pour this into stock, whisking vigorously until well combined...
Boil until thickened, about 5 minutes, stir in salt, serve...
Enjoy!
