1/4 Cup Olive Oil 1/4 Cup Dry White Wine 1 Tablespoon Lemon Juice Dash Tabasco

4 Red Fish Fillets 8 to 10 oz each Salt and Pepper Trace Flour 1/2 Cup Olive Oil 1 Small yellow Onion Chopped 4 Cloves Garlic Minced 2 Roma Tomatoes peeled, seeded and chopped 2/3 Cup dry White Wine 1/2 Cup Chicken Stock 1 Tablespoon small Capers 1 Teaspoon Lemon Juice 1/4 Teaspoon Worcestershire Sauce 1/4 Cup Fresh Mushrooms sliced 4 Tablespoons fresh basil leaves finely chopped 1 Tablespoon Fresh Parsley finely chopped

Directions:Wash the fish and pat dry. Mix all the marinade ingredients together. Marinate the fish for two minutes on each side. lightly Salt and pepper and flour the fillets.
Heat the Olive Oil in a large saute pan over medium heat. Saute two at a time so as to not crowd the pan. Cook four minutes on each side until the exterior of the fish is crusty. Remove from the pan and set aside to keep warm.
Pour out the oil left in the pan. Add the fresh olive oil and heat over medium heat. Saute onions and garlic till lightly browned.
Stir in the tomatoes, heat through, and then add the white wine. Bring to a boil, then add the chicken stock, capers, lemon juice and Worcestershire sauce. Return to a boil and reduce by about half over low heat.
Add mushrooms and heat through. Add basil and Parsley. Salt and Pepper to taste. Gently spoon the sauce over the fish and serve. |
