FILLING:
1 package yellow monggo beans, split and without skin
2 1/2 cups brown sugar
1 stick of butter

Soak the monggo beans overnight. Cook the monggo beans in a rice cooker until tender (use 1:1 ratio of water to monggo). Mix the rest of the ingredients. Cook over low heat until the mixture has a paste consistency. Set aside.

CRUST:
1 cup oil
2 1/2 cups flour

Mix together until you get a peanut butter consistency. Refrigerate for 30 minutes.

DOUGH:
1/2 cup water or milk
1/2 cup oil
2 cup flour

Mix together. Knead dough and divide in half. Roll out each portion of dough ti the size of a thin sheet of paper, about 1/8 inch thick. Spread the crust mixture evenly over the dough. Roll each sheet of dough into a cylinder, like a jelly roll and refrigerate for at least 30 minutes.

Preheat oven at 350º. Take each roll and cut it into ten pieces. Take each piece flatten it and fill the center with a spoonful of filling. Pinch the edges closed and place the hopia pinched side down on a baking sheet. Brush each hopia with a mixture of egg yolk and water. Bake at 350º for 30 minutes or until it turns brown.
