1/2 cup Lukewarm water
2 packages yeast
1 tbsp sugar
5 cups All Purpose flour
1 tbsp baking powder
1/2 tsp salt
1 cup sugar
2 tbsp vegetable oil
1/2 cup water
1 cup fresh milk

FILLING:
2-4 cloves garlic
1 medium onion
1 pound chicken, diced
1/2 cup soy sauce
Salt
Ground Black Pepper
Sugar
Spring Onions, sliced
Hard boiled eggs, sliced

Directions:
Directions:
Soften yeast in 1/2 cup warm water. Stir in sugar. Let it rise in a warm place, like the oven.
In separate bowl, mix flour, baking powder, salt and sugar. Add softened yeast to mixture, then vegetable oil. Knead until soft. Add a small amount of flour if sticky. Let it rise again 2-3 hours in a warm place.

Meanwhile, saute garlic and onion in a pan, add chicken. Season with salt and pepper and sugar to taste.
Simmer until chicken is cooked, stirring occasionally. Add soy sauce. Cook until liquid evaporated. Top with spring onions.

Pull out fist sized ball of dough. Roll flat. place a spoonful of filling in the center of dough. Top with 1-2 slices of egg. Wrap dough around the filling to form a ball. Place on small square of wax paper. Repeat for remaining dough. Let it rise 1/2 hour.

Boil water in a steamer. Place siopao side by side in the steamer. Put a paper towel in between the lid to keep the siopao from getting wet. Steam for approximately 20 minutes. Let it cool.
