Ingredients: 1 can evaporated milk 1 pack yeast 1 tsp granulated sugar 6½ cups all-purpose flour 2½ sticks Crisco shortening 1 large egg 1 tsp vanilla 1 tsp salt 1 tsp baking powder 2 cans apricot pie filling

Directions:Heat evaporated milk in saucepan. Keep stirring until almost ready to boil. Add yeast and sugar. Cool until warm to touch.
Mix flour, salt and baking powder. Add Crisco to flour mixture until it feels like bread crumbs/ peas. Make a well in the middle and then add egg mixed with vanilla and evaporated milk mixture. Mix together until it forms a dough. Divide into 3 balls. Take a towel to cover each and refrigerate at least 6 hours.
Preheat oven to 350ºF. Using 1 ball, leave others in fridge. Sprinkle equal parts flour and sugar on flat surface. Roll out dough until it is ⅛- inch thick. If it sticks, put it back in the fridge and chill for another 15 - 20 minutes. Using a pizza cutter, cut squares a little smaller than the size of a post-it note. Take a small spoon and fill with apricot pie filling. Fold over two opposite corners.
Use parchment paper on cookie sheet. Bake for 15 - 20 minutes or until golden. |
